Why does my french onion soup taste bitter?

I’ll be answering why French onion soup could taste better.

I’m someone who could really enjoy a good soup.

I like so many different kinds to where it would almost feel unfair to say one over the other when it comes to discussing which one I’d prefer most.

Obviously this post is dedicated to French onion.

I never made one from scratch but occasionally I’ll grab some frozen ones to have as a meal.

And we’re gonna get to the bottom of this bitter phenomenon.

Why does my french onion soup taste bitter

French onion soup seems to be a recipe that can go one of many ways. Sometimes the cook might have issues where the dish comes out too sweet. Sometimes it might be made where it’s overly sour, but when it comes to a bitter taste it could be most likely 1 of 2 reasons, maybe even both:

  • Burned onions
  • There could might be too much basil

Why do my cooked onions taste bitter?

Cooked onions could taste bitter for a few different reasons:

  • The quality of the onion is bad
  • The type you’re using could make a difference
  • You could be overcooking your onion

Those are just a few reasons obviously but you’ll be surprised to find out that this issue is most popular with both soups and curry dishes.

To the quality point made earlier it specifically applies to a suggestion I’m making you should try, getting organic products.

Next is the type of onion you’re looking to cook.

I’ve found that this issue happens most often with Red Onions and could be fixed if switched to white.

And last but not least, if you overcook your onion then it’ll without a doubt become bitter.

It loses its flavor if you get past cooking it and fall in the territory of scorching it.

Final thoughts

French onion soup is and always was meant to be a bland tasting soup.

I’d like to call it an acquired taste but I digress.

I have good memories of when I would order this at Applebees.

It was my go to appetizer.

But same as any other soup you could make, they can be modified to any taste you desire.

And same as any champion recipe it takes a little experimenting and messing with the original ingredients to find the taste that fit your buds perfectly.
