It’s a gender stereotype that’s enforced in which the girls shouldn’t cook in front of guests and instead have them prep food.
My personal experience with females in the restaurants are working where they’re in the front of the restaurant.
The layout of the policy they enforce at most hibachi spots include sharing an area to sit together to eat and that can be intimidating to anybody and could prove to be specially true for women.
